This is a very simple and healthy wild rocket parmigiano salad. I personally like this salad to have more Parmigiano Reggiano cheese than normal that`s why I prefer to put 30/40g. If you don`t like the cheese taste that much you can use only 20g.
This wild rocket parmigiano salad is the salad that I always go for because is very quick but so tasty and all I need when I get home after work is something that I can prepare quickly.
I love that has such a great taste and it works next to juicy beef steak, a pork steak or even a roasted chicken.
Rocket salad or Arugula is peppery, spicy and a bit nutty and is rich in calcium, potassium, folate, vitamin A, vitamin C, vitamin K. Usually Arugula being a salad, is eaten raw and is used in sandwiches, in wraps or on topping for pizza.
You can add whatever vegetables you want, also if you want you can add chicken or croutons. Also, instead of parmesan, you can add feta cheese. By adding chicken, in addition to all the vitamins in the salad, you also add protein.
Ingredients
- 100g wild rocket salad
- 30/40g Parmigiano Reggiano cheese, shaved (use the potato peeler)
- 2 teaspoon of balsamic vinegar
- salt & pepper, freshly ground
Instructions
Put the wild rocket in a bowl together with Parmigiano Reggiano cheese on top, add the olive oil, balsamic vinegar, salt & pepper and mix it all together.
