This homemade vegan pancakes are fluffy, light, made with simple ingredients. You probably have in your kitchen all the ingredients needed.

I have made this homemade vegan pancakes with just few healthy ingredients like plant based milk (you can use your favorite vegan milk), fruits (you can use any fruits you like or you can add vegan chocolate chips), honey or maple syrup and almond butter or vegan cacao butter. If you fancy something sweet this vegan pancakes recipe is the recipe to go for. Also the whole house will smell like a candy shop.

Originally from America over years had become famous all over the world just because there`s such an easy recipe to make.

Ingredients

  • 250g self-raising flour
  • 4 tbsp caster sugar
  • 2 tsp baking powder
  • Good pinch of salt
  • 300ml soya milk or almond milk
  • ½ tsp vanilla extract
  • 8 tsp sunflower oil, for frying
  • strawberries & blueberries
  • honey or maple syrup (whatever you fancy)
  • almond butter

Instructions

Put the flour, sugar, baking powder and salt in a bowl and mix thoroughly. Add the milk and vanilla extract and mix with a whisk until smooth.

Place a large non-stick frying pan over a medium heat. Add 4 teaspoon of the oil and wipe around the pan with a heatproof brush or carefully use thick kitchen paper.

Once the pan is hot pour a small amount of the batter ( around 2 dessert spoons) and spread with the back of the spoon until around.

Cook for about a minute, or until bubbles are popping on the surface and just the edges look dry and slightly shiny. Quickly and carefully flip over and cook on the other side for a further minute or until golden brown. You can always flip again if you need the first side to go a little browner.

Decoration: Place them nicely on a plate and for decoration I`ve choose strawberries, blueberries, honey or maple syrup and almond butter.
