This roasted chicken & potatoes recipe is very simple and is suitable for any occasion. Especially when the whole family gathers for dinner. I think everyone likes roasted chicken & potatoes because it is also very delicious.
Ingredients
- 1 whole chicken
- 5 – 6 potatoes
- 2 clove of garlic, minced
- olive oil
- paprika
- salt & pepper
Instructions
Cut the chicken into pieces. You can also use chicken thighs. Clean it and wash it very good.
Peel the potatoes, cut them in halves or in quarters and wash them very good. If you prefer, you can let the potatoes with the skin.
Season the chicken and potatoes with freshly ground salt and pepper and add the minced garlic. For the potatoes add paprika and a little bit of olive oil. Mix the chicken and potatoes with the ingredients.
Take a large roasting pan. Before to put the chicken and the potatoes in the tray, I use baking paper so the chicken or the potatoes doesn’t stick to the tray. You can use a little bit of butter instead baking paper to line the tray. Put the chicken and potatoes in the pan, add a little bit of water and cover the tray with aluminium foil. Preheat the oven at 180C and put the tray in the oven for 30 minutes.
After 30 minutes, remove the aluminium foil and put the tray back in the oven for another 45 minutes. From time to time, turn the chicken and potatoes to roast on all sides.
With 5 minutes before it is done, you can put honey on the chicken to catch a nice crust.
We eat this roast chicken & potatoes with homemade garlic sauce.
