
If you fancy something sweet but in the same time you don`t want to put a lot of effort, this homemade banana bread recipe will be the best idea. Very simple to prepare will gather everyone around once is done smells deliciously. Perfect for the next morning coffee if it will last that long.
Banana bread comes from the United States and there are many variations: banana nut bread, chocolate chip banana bread or banana raisin bread are just few of them.
If you have some ripe bananas and you don’t know what to do with them, you can make a very delicious homemade banana bread.
Ingredients
- 140g butter, softened
- 140g caster sugar
- 140g self-raising flour
- 1tsp baking powder
- 2 large eggs, beaten
- 2 very ripe bananas, mashed
- 50g icing sugar
- optional chopped chocolate and nuts
Instructions
Heat the oven to 180/160 C fan.
Butter a 2lb loaf tin and put baking paper on the base and sides.
In a medium bowl whisk until cream 140g softened butter with 140g caster sugar until fluffy and light, then slowly add the 2 beaten eggs with 1-2 spoons of the 140g flour.
Incorporate in the remaining flour, 1 tsp baking powder and 2 mashed bananas, at this point I would advice you to use a spatula.
For tasting even better add chopped chocolate and nuts.
Pour the mixture into the butter tin and bake for about 50 mins at 180-200 C. Check the loaf after the first 30 mins. You can test it with a skewer (should be removed cleanly if is done) as time may vary depending on the oven and also on the shape of your loaf tin.
Once done let it cool in the tin for about 10 mins, then remove it on a wire rack.
For the icing, mix 50g icing sugar with 2-3 tsp water. Drizzle the icing on top of the cake and let it set for about 5 mins.
