
This baked salmon with broccoli & cherry tomatoes is another very simple and also healthy recipe. Myself and my husband love salmon and broccoli. We use a wild red salmon rich in protein, omega-3 and vitamin D and organic broccoli rich source of vitamin C and vitamin K.
Broccoli is a green plant from the cabbage family that is very similar to cauliflower and can be eaten both raw and cooked by steaming, stir-frying or microwaving.
We make this baked salmon with broccoli & cherry tomatoes recipe very often because it is very quick to make and is perfect for evenings when we arrive late and tired from work and want to have dinner.


Ingredients
- 400g salmon fillet
- 300g broccoli
- two vine of cherry tomatoes
- Teriyaki sauce
- Soy sauce
- salt & pepper
Instructions
Take the scales from the fish and check if there are any bones and remove them very gently so as not to break the flesh of the fish because we want it to look as beautiful as possible. Season the salmon with salt and freshly ground pepper.
Line a baking tray with baking paper and put the salmon in the tray.

Preheat the oven at 180C and put the tray in the oven for 20 minutes.
Meanwhile, put a pot of water to boil for broccoli. When the water is at simmer, put the broccoli in for 15 minutes. Check the broccoli from time to time to make sure it doesn’t boil to much because, like the salmon, we want the broccoli florets to stay intact and green and to look as beautiful as possible.

With 5 minutes before the salmon is done, you can put Teriyaki sauce and soy sauce on it to catch a nice crust and add the cherry tomatoes in the tray.

We eat this salmon & broccoli with homemade garlic sauce.
