I`ve made this tuna and feta salad one day at work for myself and my colleagues. After testing it they said I would be crazy to don`t open a restaurant, they also assured me they`ll will came daily for the food. For me personally I like to see people enjoying my food, makes me feel happy and sometimes all you need is good food and some laugh. This tuna and feta salad is a very healthy, quick and very filling salad made with feta cheese, pieces of tuna and some vegetables. Besides the vegetables I added, you can add any vegetables you like, also instead of tuna you can add chicken if you like chicken more and you want some meat protein instead of the protein from the tuna or you can add croutons.
Tuna is very healthy, rich in protein and contains many vitamins and minerals such as vitamin A, vitamin B, vitamin D, iron, selenium, phosphorus and omega 3.
Ingredients
- 250g feta cheese
- 2 tins of tuna chunks in sunflower oil
- 1 tin of 200g sweetcorn
- 1 avocado
- half of cucumber
- 1 vine of cherry tomatoes
- 1 bag of rocket salad
- 1 bag of mixed leaf salad
- 1 tbsp balsamic vinegar
- 3 tbsp of extra virgin olive oil
- freshly ground salt & pepper
Instructions
Put the salad in a big bowl, slice the cucumber, the cherry tomatoes, avocado and put together in the bowl.
Carefully cut the feta cheese in squares and add it in the bowl.
Drained the oil from the tuna tins and add the tuna chunks and drained sweetcorn.
Put the oil, balsamic vinegar, freshly ground salt and pepper and mix all together but carefully to don`t break the cheese.
