As a child I used to see my mum making this homemade doughnuts recipe very often, especially in the weekends.
Being 4 girls my mom was always busy around the house but she always found time to make us happy and made some soft and fluffy homemade doughnuts.
We used to have our flour made from our wheat, eggs from our chickens, so obviously tasted better. I like to measure everything but my mom was making this homemade doughnuts recipe on the go she would say ‘’by eye’’.
After she kneaded the dough she would let it rise and once ready for frying our favourite part was coming.
I loved that she let us ‘’help’’ her form the homemade doughnuts. She would give us a mug and we were forming the doughnuts but actually we were making a lot of mess.
Once ready she would sprinkle powder sugar on top and of course by the end we were full and not many doughnuts left in the bowl 😊

Ingredients
- 600g – 650g all purpose flour
- 25g fresh yeast or 7g dry yeast
- 250ml warm milk
- 100g white sugar
- 80g melted butter
- 2 eggs
- Zest of a lemon & orange
- Vanilla essence
- Pinch of salt
- Oil for frying
Instructions
Before you start melt the butter for few seconds in the microwave or take out from fridge with few hours before.
TIP: If you want your homemade doughnut to be fluffy sift the flour.
Put the milk in a bowl in a mixer bowl, is up to you.
Add the yeast, sugar and the zests of lemon and orange. Mix it with a whisk to dissolve it, the warm milk will help. Leave it aside for 10-15 mins so the yeast will activate, cover with a kitchen towel and leave it in a warm place.
Now add the salt, vanilla essence, the melted butter, the eggs and mix all using the whisk.
Incorporate the flour with a spatula and when the dough is formed use your hand and knead the dough for 10 minutes.
The dough needs to be soft and sticky so your homemade doughnuts will be fluffy.
Before you finish incorporate a spoon of oil and knead it for 1-2 minutes. You can also put few drops of oil in the bowl to don`t stick.
Cover the bowl with cling film and let it rise for 60 minutes in warm place.
Divide the dough in 2 sprinkle some flour on the worktop and spread a sheet of dough about 2 cm thick (not thin).
Sprinkle some flour on top of the sheet too and also on the side where you`ll put them once cut.
As my mum taught us take a big mug and cut the doughnuts. Put them by side and leave another 30 mins to rise covered with cling film. Keep going until you finish all the dough.
In a skillet put some oil, more than usual. It needs to be warm, medium heat but not hot. Fry them for about 3-4 minutes on each side or until you`re happy with the outcome.
When the doughnuts are done take them out on a paper tissue and after put them in a bowl and sprinkle some powder sugar on the fried doughnuts.
Carry on until you finish all of the doughnuts.
